This is a pretty cool cocktail with great flavour and the cucumber frozen flower really keep the cocktail cold. This drink takes a little bit of prep but the great thing is the simple syrup keeps for up to 4 weeks when refrigerated and covered.
Cucumber Flower
Instructions
- Cut a 2 inch piece from a whole cucumber
- Slice 1 ½ inches into the top of the piece making slits ⅛ of an inch in width
- Slice in the opposite direction the same width so that you make a checker board pattern
- Submerge into water and spread the pieces until they are very malleable
- Take out of the water and press the it end down so that the cucumber "straws" splay
- Place on the bottom and freeze

Ingredients
- 1 oz Hendricks Gin
- 1 tbsp Rosemary Simple Syrup
- 2 Slices of Cucumber
- 4 oz Soda Water
- 1 Squirt of Lime Juice
- 3 cups Water
- 2 cups Sugar
- 4 Rosemary Sprigs
Instructions
- Add water, sugar and the leaves from rosemary sprigs, boil until reduced to a third
- Strain and chill the simple syrup
- Pulverize the cucumber, lime juice and simple syrup in the bottom of the glass with a muddler
- Fill with ice, add gin and top with soda
- Stir vigorously before serving
- Garnish with frozen cucumber flower
