This is a pretty cool cocktail with great flavour and the cucumber frozen flower really keep the cocktail cold. This drink takes a little bit of prep but the great thing is the simple syrup keeps for up to 4 weeks when refrigerated and covered.

Cucumber Flower


  1. Cut a 2 inch piece from a whole cucumber
  2. Slice 1 ½ inches into the top of the piece making slits ⅛ of an inch in width
  3. Slice in the opposite direction the same width so that you make a checker board pattern
  4. Submerge into water and spread the pieces until they are very malleable
  5. Take out of the water and press the it end down so that the cucumber "straws" splay
  6. Place on the bottom and freeze



  • 1 oz Hendricks Gin
  • 1 tbsp Rosemary Simple Syrup
  • 2 Slices of Cucumber
  • 4 oz Soda Water
  • 1 Squirt of Lime Juice
  • 3 cups Water
  • 2 cups Sugar
  • 4 Rosemary Sprigs


  1. Add water, sugar and the leaves from rosemary sprigs, boil until reduced to a third
  2. Strain and chill the simple syrup
  3. Pulverize the cucumber, lime juice and simple syrup in the bottom of the glass with a muddler
  4. Fill with ice, add gin and top with soda
  5. Stir vigorously before serving
  6. Garnish with frozen cucumber flower
