Southern Cross

As if a mojito isn't good enough, imagine the flavours of ginger, raspberries and blueberries.....yes this recipe is just that amazing!


  • 1 ½ oz Bacardi Raspberry Rum
  • 3 oz Ginger Beer
  • 2 oz Soda Water
  • 5 Mint Leaves
  • 5 Blueberries
  • 1 tsp Brown Sugar


  1. Combine berries, mint (less one leaf), brown sugar in the bottom of the drinking vessel (Collins glass)
  2. Muddle the contents until a simple syrup is created in the bottom of the glass
  3. Add ice and fill to the top
  4. Pour rum, soda water and ginger beer until full
  5. Add a sturdy straw
  6. Take the final mint leaf, press the leaf into your palm with your thumb once (the heat from your hand helps release menthol from leaf)
  7. Place as garnish
