Gibson Martini


  • 3 oz Beefeater 24
  • Splash of Dry Vermouth
  • 3 Cippolino Onions


  1. Pour the gin into a shaker half full of ice and shake until well chilled
  2. Pour a splash of vermouth into the martini glass and roll the liquid around the surface of the bowl
  3. Discard vermouth and strain gin into the glass
  4. Poach cippolino onions in vermouth covered for 20 minutes or until they start to shed their layers
  5. Reserve and chill
  6. Garnish the martini onions
