• 1 French Baguette, cut into 1 inch thick pieces
  • 425 g Firm Ricotta Cheese
  • 3 Medium Heirloom Tomatoes, each a different colour
  • ⅛ cup Sweet Onion, finely chopped
  • 4 tbsp Italian Parsley, chopped
  • 4 tbsp Fresh Basil, chopped
  • 4 tbsp Olive Oil
  • 1 tbsp Dried Oregano
  • 1 tsp Instant Dissolve Sugar


  1. Combine all solid ingredients into a large bowl except for sugar
  2. Mix sugar and oil until dissolved
  3. Add oil and toss thoroughly to combine ingredients and cover with herbs and oil
  4. Heat your BBQ until 450 F
  5. Brush slices of bread lightly with olive oil and place on grill
  6. Remove once light grill marks show
  7. Rub a smashed garlic bud on each piece of bread and turn off bbq
  8. Add mixture to each slice and place on grill
  9. Close cover for approximately 2 minutes remove and serve
  10. Squirt a small amount of fresh lemon juice across all pieces
