Couscous Stuffed Cremini Mushrooms


  • 1 box Couscous
  • 9 Large Dried Apricots, diced
  • ¼ cup Pistachios
  • ¼ cup Golden Raisins
  • ¼ cup Shallots, diced
  • 3 tsp Fresh Parsley, finely chopped
  • 1 tsp Fresh Mint, finely chopped


  1. Make couscous according to directions on box with desired seasoning except add shallots while cooking
  2. When letting the couscous sit covered, add apricots and pistachios, golden raisins
  3. Clean and remove stems from mushrooms
  4. Saute a few at a time gently for a couple of minutes until fragrant and reserve
  5. Fill each cap with couscous and serve
