Mushrooms on Toast with Leeks

After eating this dish at Cucci restaurant I had to tweak it to make it my own. This is a super simple yet flavour thrilling recipe that can be made as an appetizer between your salad and main or done in a more dainty version for a delightful canape perfect with sparkling wine or with any dark spirit based cocktail.

Makes 8 Toasts


  • 2 cups Wild Mushrooms, sliced thin
  • ¼ cup Thinly Sliced Leeks
  • ½ cup Shredded Cave Aged Gruyere Cheese
  • ⅛ cup Jack Daniels Honey
  • 3 pinches Montreal Steak Spice
  • Salt
  • Pad of Butter
  • 4 Pieces of White Bread


  1. In a non-stick pan add butter, leeks, mushrooms and pepper with salt
  2. Saute until slightly browned
  3. Add JD honey and cook on high until the liquid is almost gone
  4. Add shredded gruyere
  5. Mix well and reserve, cover with plastic wrap
  6. In the same pan melt garlic butter and place bread
  7. Allow to brown flip and brown
  8. Place mixture directly on bread
  9. Slice and serve
