Hotel California Balls

This is a fun way to do sushi and it is fast! The balls are easy to eat and the great thing is that you can prepare ahead of time and leave them for 8-12 hours in the fridge in the plastic wrap which helps them to stick together even better. You can also really jazz these up by placing smoked salmon, trout, thin cucumber slices etc on the outside to provide some additional visual "wow"


Makes 14 Balls

Ingredients

  • 3 Avocados
  • 6 oz Lump Crab Meat
  • ¼ cup Sticky Rice
  • ¼ cup Sweet Corn Kernels
  • 1/4 cup of cooked diced Red Pepper
  • ⅛ cup Green Onion, sliced
  • 5 tbsp Thai Basil, shredded
  • 1 tbsp Truffle Oil
  • ½ tsp Fresh Lemon Juice
  • Salt
  • Pepper

Instructions

  1. Remove avocado flesh from skin and mash into a bowl
  2. Pat dry crab meat and place in a colander while using to allow for excess liquid to drain
  3. Mix corn, sweet pepper together with green onion and thai basil
  4. Combine oil and lemon salt and pepper together in a small bowl
  5. On 5 inch squares of saran wrap spread rice enough to cover the ingredients
  6. Add ¼ inch of avocado mashed
  7. Cover with a thin layer of vegetable mixture
  8. Add a clump of crab and pour oil on each allowing for each sphere
  9. Quickly taking all corners, bring them together and twist so as to create a ball in the saran wrap
  10. Place in freezer for 20 minutes to keep form
  11. Remove 10 minutes before serving
  12. Serve with soy sauce
