Chicken Taquitos

Ingredients

  • 1 Large Chicken Breast, boneless and skinless
  • 2 Sweet Potatoes
  • 1 Avocado
  • 1 Red Onion, sliced
  • 1 Red Pepper, chopped
  • 1 cup Canned Corn
  • ½ cup Black Beans
  • ½ cup Jalapeno Sliced Canned Peppers
  • ¼ cup Lentils
  • 5 oz Mozzarella Cheese
  • 5 oz Cheddar Cheese
  • Green Tabasco Sauce
  • 20 Mini Tortillas

Instructions

  1. Lightly coat chicken with olive and salt and pepper
  2. BBQ until done and place on a cutting board
  3. Using a fork, shred the meat and dash with green Tabasco sauce
  4. Reserve
  5. Saute onions, red peppers until tender
  6. Strain and rinse lentils, beans, corn and jalapeno peppers adding them to the pan and cooking for 2 minutes
  7. Spoon approximately 2 tbsp of veg, chicken and cheese to a pile 1 inch wide and 6 inches long
  8. Roll the tortilla tightly and place on BBQ.
  9. Heat bbq on high to reach 500F. Place taquitos on the grill and turn off heat
  10. Let already hot grill mark and crisp the tortilla
  11. Roll until the entire surface is crisp
