Flat Bread Pizza 3 Ways

Tropical Chicken Za

Ingredients

  • 1 Large Boneless Chicken Breast, cut into 2 x ½ inch strips
  • 1 Green Mango
  • ¼ cup Red Onion, finely chopped
  • 3 tbsp Cilantro, finely chopped
  • 5 slices Spicy Pancetta
  • 2 Tangerine Tomatoes, chopped
  • 1 cup Aged Cheddar Cheese
  • 4 tbsp Capon BBQ Sauce
  • ⅛ cup Tomato Basil Tomato Sauce
  • 4 oz Pizza Dough

Instructions

  1. Preheat oven to 375F, if making on a pizza stone spread semolina flour to dust the stone and heat for 20 minutes
  2. During preheat slice mango in half feeling the stone with your knife
  3. Cut squares into the mango and flip skin inside out
  4. Pull fruit from skin or use pairing knife to help
  5. Cut mango cubes into thin strips approximately ½ inch thick
  6. Place in a medium nonstick pan and cook on medium while agitating as needed
  7. Cook until mango starts to brown on edges, remove and reserve on paper towels to drain any excess juice
  8. Without washing the pan add a splash of red wine to the pan
  9. Add chicken and fry until done
  10. Add another splash of red wine and turn up element to deglaze the pan
  11. Reserve chicken
  12. Roll out dough until desired thinness
  13. Add tomato sauce, chicken, red onion, mango, pancetta, cheese in that order
  14. Drizzle bbq sauce across surface of the the pizza
  15. Cook until the crust is tender turning half way
  16. Upon turning add tomato
  17. Remove from oven and add cilantro allow to cool for 4 minutes before cutting

Pestoza

Ingredients

  • 8 Large Green Tiger Shrimp Deviened and Butterflied
  • 4 slices Double Smoked Thick Bacon
  • 2 Garlic Buds, minced
  • ¼ cup Sweet Onion, thinly sliced
  • ¼ cup Manchego Cheese, grated
  • 5 oz Port
  • 3 tbsp Butter
  • 1 tbsp Olive Oil
  • ⅛ cup Curly Parsley
  • ⅛ cup Fresh Basil
  • 2 tbsp Fresh Oregano
  • 2 tbsp Black Olives, chopped
  • 4 tbsp Light Olive Oil
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 375F, if making on a pizza stone spread semolina flour to dust the stone and heat for 20 minutes
  2. Add parsley, basil, oregano, olives, light olive oil, salt and pepper into a food processor and pulse until well blended and thick
  3. Add 1 ounce of port
  4. Pulse until well blended
  5. Using a spatula remove pesto from bowl and place in refridgerator for 20 minutes
  6. In a small suace pan add 1 tsp of butter and onions
  7. Sweat onions covered on medium for 3 minutes or until slightly done
  8. Add port until onions are covered Add 1 tbsp of brown sugar and boil for 1 minute reduce heat and stir until simmering
  9. Simmer until desired sweetness (approximately 25 minutes) reserve
  10. Add 1 tbsp and a splash of olive oil into a non-stick pan
  11. Cook bacon until medium rare and remove placing on paper towels to drain
  12. Without cleaning the pan only to take off excess oil add diced garlic and sauté for 2 minutes
  13. Add shrimp and cook on high until medium doneness and remove allowing for some of the garlic to stick to the shrimp
  14. Roll dough until desired thinness
  15. Add pesto, onions, bacon and cheese
  16. When turning the pizza add shrimp and tent with foil until the last 3 minutes of cooking

Famous Ray-Za

Ingredients

  • 1 Spicy Italian Sausage
  • 2 Brown Cremini Mushrooms
  • 3 Shiitake Mushrooms
  • 1 King Oyster Mushroom
  • 13 Pistachios, hulled
  • 7 Fresh Basil Leaves, julienned
  • ¼ cup Smoked Mozzarella, grated
  • 4 tbsp Gran Padano Parmesan Cheese, finely grated
  • 1 tbsp White Truffle Oil
  • ⅛ cup Tomato Basil Sauce

Instructions

  1. Preheat oven to 375F, if making on a pizza stone spread semolina flour to dust the stone and heat for 20 minutes
  2. Cook sausage until medium doneness either on grill or fried
  3. Allow to cool then slice thinly
  4. Roll dough until desired thinness, add sauce, sliced mushrooms, sausage and cheese and pistachios in that order
  5. Allow to cook turning half way
  6. Remove from oven and add basil leaves then sprinkle parmesan on top of the pizza
  7. Just before serving drizzle truffle oil
