Skewers of Black and White Shrimp



  • 2 lbs Black Tiger Shrimp (12-15 count)
  • 3 Eggs
  • 3 tbsp Garlic Olive Oil
  • 1 cup Black Sesame Seeds
  • 1 cup White Sesame Seeds
  • Chili Flakes, as desired


  1. Clean and break the back of the shrimp so that they are straight
  2. Skewer from tail to head
  3. Repeat until all of the shrimp are lying on a paper towel drying
  4. Crack eggs and beat in a champagne flute
  5. Mix sesame seeds and chill flakes if desired onto a plate
  6. Dip shrimp into champagne flute so that the entire surface is coated
  7. Roll on sesame seeds
  8. Continue until all shrimp are done
    In a non stick pan add garlic oil and keep at medium high
  9. Place shrimp in pan and turn gently while cooking
  10. Part way through cooking (5 minutes) dip into egg mixture and roll again in sesame seeds replace in pan until done (5 minutes)



  • ¼ cup Mayonnaise
  • 3 tbsp Soy Sauce
  • 1 tsp Sambal Oelek Chili Sauce
  • Dash of Fresh Squeezed Orange Juice


  • ¼ cup Fresh Apple Cider
  • 2 oz Sake
  • 2 tsp Sweet Onion, minced
  • 1 tsp Brown Sugar
  • ½ tsp Ginger, grated
  • Dash Sambal Oelek


  1. Cook on high for 4 minutes
  2. Remove from heat and reserve
