Beef Medallions With Mushrooms and Blue Cheese

Mini Rounds of Fillet Mignon - fillets cut into dollar size rounds, topped with cremini mushroom filled with blue cheese and crumbled blue cheese served on poker chips

Makes 20 Servings

Steak Medallions


  • 10 Filet Mignon
  • ¼ cup Olive Oil
  • 2 Garlic Buds, minced
  • 1 tbsp Montreal Steak Spice
  • ½ tsp Cayenne Pepper


  1. Combine thoroughly, cover each steak well and let sit until room temperature before cooking until medium rare
  2. Using a sharp pairing knife cut circles out of each steak
  3. Place the mushrooms described below on top of steak medallion



  • 24 Medium Brown Cremini Mushrooms
  • 4 oz Blue Cheese
  • 8 oz Madeira
  • Bread Crumbs


  1. Wash and clean 24 cremini mushrooms
  2. Place grill side down in a plate with madeira for 20 minutes
  3. Place into a frying pan not too close together to allow for browning
  4. Flip once
  5. While hot, fill with blue cheese and dust with bread crumbs
