Homemade Mac and 4 Cheese - with basil and chipotle ketchup

This is an awesome mac and cheese recipe that is savory and sweet illustrating that the original flavor of kraft dinner can be used with 40 dollars with of imported cheese and they can all play together in the same dish incredibly well.


Ingredients

  • 1 box Kraft Dinner Spirals
  • 1 cup Aged Gruyere Cheese, grated
  • ½ cup Asiago Cheese
  • 4 oz Table Cream
  • 5 Large Shallots, sliced into fine thin strips
  • 3 tbsp Frozen Fresh Basil (4 cubes)
  • 1 tbsp Brown Sugar
  • 1 cup Ketchup
  • 5 tbsp Worcestershire Sauce
  • 12 dashes Tabasco Garlic Sauce

Instructions

  1. Mix ketchup, worcestershire sauce and tabasco sauce to make a spicy ketchup
  2. Saute shallots with 1 tbsp of unsalted butter and allow sweating for 3 minutes covered
  3. Remove cover and add brown sugar stirring until covered and continue cooking until tender
  4. Boil water and cook noodles, drain when done
  5. Add shallots, basil, cheese powder and table cream into the now empty pot and stir constantly until shallots start to cook
  6. Add in noodles and stir
  7. Stir in grated cheese with element on low
  8. Allow to mix well until a slight sizzle can be heard in the bottom of the pot
  9. Noodles should taste tangy and touch sweet complimenting the sharp asiago and gruyere
  10. Add a little more cream if necessary, cover and remove from heat to allow flavours to meld

These noodles are ready to be served but you can make the dish even more exciting by following the instructions below

Additional Steps

  1. Add the noodles to a buttered casserole dish so that the noodles are approximately 2 inches thick
  2. Cover with plastic wrap and allow to chill in fridge overnight
  3. Remove from refrigerator and cut into fingers approximately as wide as they are deep
  4. In a skillet on high, pour a touch of chili olive oil
  5. Place 3 "KD Fingers" into the pan and allow to brown, turn until each of the 4 sides is brown and place onto a plate
  6. Repeat and cover the done fingers with tin foil
  7. Once all are done arrange like a jenga tower and serve with spicy ketchup
