Arugula and Baby Herb Salad with Grilled Watermelon, Sesame Snaps, Chevre and Panchetta in a Balsamic Honey Vinaigrette

This is one of our favorite salads and for good reason, the flavours are terrifc together and everyone loves this super easy and gorgeous looking salad. Put it into mason jars, serve in pagoda boxes and simply and elegantly on a perfect square white plate with a dizzled dressing...this one always works anywhere at anytime.


Makes 8 Servings

Ingredients

  • 24 oz Baby Arugula Washed and Dried
  • 14 slices ¼ Inch Thick Pancetta
  • 2 cups Watermelon
  • 8 oz Peppercorn Rolled Chevre
  • 3 cups Sesame Snaps, nonsalted
  • 1 cup Balsamic Vinegar
  • ¼ cup Honey

Instructions

  1. Cut pancetta into 1 by 1 inch squares
  2. Cook pancetta on high on your BBQ turning constantly so as not to burn
  3. Remove and slice into small bites place into a bowl and cover with plastic wrap
  4. Combine all of your salad ingredients together in a large bowl
  5. If the pancetta isn't warm, warm it slightly in the microwave with the plastic wrap still on the bowl so it stays moist
  6. Add to the salad, add dressing and toss
  7. Serve quickly and enjoy
