Stacked Caprese with Halumi Cheese

This is a funky version of the classic italian salad. The heirloom tomatoes add gorgeous colour and flavour and the bet thing is with everything comin gin so many differnt sizes these days. this salad can be 4 inches wide or an inch wide for a bite sized version.

Makes 6 Servings


  • 2 Yellow Heirloom Tomatoes
  • 2 Red Heirloom Tomatoes
  • 2 Orange Heirloom Tomatoes
  • 12 Large Basil Leaves
  • 2 cups Arugula
  • 2 Medium Bocconcini Balls
  • 1 cup Balsamic Vinegar
  • ½ cup Cabernet Sauvignon


  1. Add balsamic vinegar and cabernet sauvignon in a nonstick pan and whisk while bringing to a boil
  2. Reduce temperature to a simmer and constantly whisk
  3. Agitate every 10 minutes with a spatula to rub the edges of the pan loose and reduce until slightly sweet and liquid is sticking to the spatula
  4. Reserve and allow to rest
  5. Slice bocconcini and tomato into ½ inch slices
  6. Arrange the slices of tomato to make a stack with a cheese slice and basil leaf in between each tomato slice
  7. Build the stack on top of some arugula leaves and place on the table
  8. Drizzle dressing using a squeeze bottle once served
