Water St Cooker - Caesar Salad

We were so happy to have Chef Doran as a Nosher since this is one of our favorite restaurants on the shores of Lake Ontario; the iconic Water St. Cooker. Doran is known for his innovative recipes that explore the produce and ingredients found locally with creativity and flavour that speaks volumes.

Makes 4-6 Servings



  • 1 cup Olive Oil
  • 3 tbsp Balsamic Vinegar
  • 3 dashes Worcestershire
  • 3 dashes Tabasco
  • 1 Garlic Clove, finely chopped
  • Zest and Juice from Lemon
  • 1 tbsp Caper, chopped (plus 1 tbsp of brine)
  • 1 tbsp Dijon Mustard


  1. Add ingredients to a medium size mason jar combine all ingredients
  2. Add lid, shake well and refrigerate



  • 2 Hearts of Romaine, 14-15 pieces
  • 3 oz Crumbled Blue Cheese
  • 8 piece Anchovy
  • 10-12 Croutons
  • 12 slices Roasted Red Pepper
  • 10 pieces Bacon
  • 3 oz Shaved Parmesan
  • 3 Hard Boiled Eggs, cut in half


  1. On a large serving platter neatly arrange the romaine hearts
  2. In a sporadic fashion arrange the peppers, anchovies, croutons and eggs
  3. Sprinkle over crumbled blue cheese
  4. Drizzle over the dressing
  5. Place the bacon and shaved parmesan on top of the salad
