Croque Monsieur


  • 8 oz Black Forest Ham
  • 4 oz Cave Aged Gruyere Cheese
  • 2 oz Gran Padano Cheese
  • ⅓ cup Vidalia Onion, chopped
  • 1 tbsp Butter
  • ½ tsp Quick Dissolve Sugar
  • Salt and Pepper


  1. In a non stick pan melt butter, add onion, cooking on med-low and covered to sweat
  2. Add half a tsp of quick dissolved sugar and stir until dissolved and reserve
  3. Slice crust off bread and add cheese, ham, onions and top with remaining cheese over 3 slices
  4. Add top slice and brush with melted butter
  5. Grill on panini press until grill lines form
  6. Garnish with arugula and mustards
